Kanetsu Sashimi. The blade is made from 33 layers of stainless Damascus steel. The core layer is made of VG10 steel with a HRC of 60-61°. On both sides it is protected by a layer of nickel and silver. In addition, each 15 layers Damascus are forged integral. The so-constructed blade offers maximum cutting efficiency combined with maximum flexibility. The perfect mirror finish, and a handle made of Pakka and cocobolo, which is ergonomically designed with its chestnut shape round out this masterpiece optimally.

The surface structure as an homage to the traditional forging techniques is pressed by machine. The traditional fillet knife for the cutting of finest slices of meat and fish.
